Tuna & Sweetcorn Melt

A melt is any kind of toasted sandwich in which cheese is added to the filling and heated until it melts. This version adapts the standard tuna melt with an addition of sweetcorn.

Here sweetcorn is added to a basic tuna melt. Adding sweetcorn works well and makes a the melt less rich.

What you need

80g tuna from a tin (single portion size)

60g sweetcorn

1 tbs mayonnaise

40g nutty cheese such as Jarlsberg or Emmental

1 ciabatta roll or panini bread

Salt, pepper and a squeeze of lemon


Dill pickle and mustard to serve

How Dad Cooked It

A melt can use any type of bread. For sliced bread it is usual to butter the outside of the bread so that this fries and browns. It’s a good idea to limit the amount of butter and mayonnaise as it all adds to richness. Sweetcorn can be rather sweet, so offset this with a little salt, plenty of pepper and a good squeeze of lemon. There is no reason why a toasted, grilled or fried melt cannot be finished in the a microwave or hot oven to melt the cheese if necessary.

Mix the tuna, sweetcorn, mayonnaise, and season. Cut the bread into two halves and lightly butter each on the insides. Fill the bottom piece with the tuna mixture and cover with cheese and the other half of bread. Heat on a grill pan or flat non-stick pan, finish in the oven or a microwave if necessary. Serve with dill pickle and mustard.
