A Simple Sharer of Asparagus with Butter and Lemon

This way of eating asparagus is how our mother served it when we were a young family living in California. California is known as Americas vegetable basket, and is particularly famous for its asparagus and artichokes. We would often stop by roadside shacks selling asparagus spears straight from the fields. The only way to cook and eat this beautiful vegetable when it is this fresh is to to steam it and pile on a plate with butter lemon and salt!

Most cooks agree that when you have an amazing ingredient it is best to prepare it as simply as possible. And they are not wrong: this must be the very best way to eat asparagus. Steamed and presented in a big stack to share. Butter, salt and lemon are optional extras...

400g or more of asparagus

Butter, salt, lemon

How Dad Cooked It

For the asparagus, bend and break the woody bottoms off of the stalks with your fingers, do not trim unless they are very thick spears. Boil in salted water for 2-3 minutes until just tender, drain and pile onto a plate. Season with salt, pepper, melted butter and lemon to taste.
